  • Elbow macaroni – 1 lb
  • 1 stick of butter unsalted and divided – 8 tablespoon
  • Milk – 4 cups
  • All-purpose flour – ½ cup
  • Gruyere cheese weighing 12 oz – 4 cups
  • Kosher salt – 1 teaspoon
  • Cheddar, extra sharp and grated weighing 8 oz – 2 cups
  • Freshly ground black pepper – ½ teaspoon
  • Panko bread crumns – 1 cup
  • Nutmeg – ¼ teaspoon
  • 1 Lobster meat weighing ½ lbs cooked and cut into pieces of ½ inch

Methods to Prepare:

  • Get an oven and preheat it to 375 degrees F. Keep six to eight gratin dishes aside.
  • Take pasta and cook it as per package instructions. Take a large stockpot for cooking and do not take more than 3 minutes.
  • Complete the cooking process in the oven and then get the pasta well drained.
  • Once done, take butter in 6 tablespoons and melt it over medium heat in a saucepan. Take flour to whisk it well and then cook for around 1 ½ minutes.
  • Get the milk whisked slowly into the butter-flour mixture till there remains no lump. Once done, heat the milk and keep stirring it frequently till it completely coats the back portion of the spoon.
  • As soon as it starts bubbling, allow it to cook and stir the pan’s bottom portion that can prevent burning.
  • Remove the stuff from the heat and add some cheese. Once done, take a rubber spatula to stir the milk well and ensure that it is melted completely.
  • Stir the pepper, salt and nutmeg thoroughly.
  • Get the remaining 2 tablespoons of butter and melt it in a large sauce over medium heat. At the same time, keep the milk in its cooking process.
  • Take the bread crumbs and toss them with the melted butter. Keep toasting them till they turn golden brown.

  • Get the lobster meat, add it into the cheese sauce and get the entire mixture poured over the hot pasta.
  • Transfer the stuff to the baking dishes and place them on a baking sheet so that it does not spill over the oven.
  • Top the mac n’ cheese with bread crumbs sprinkled evenly.
  • Do not take more than 50 minutes to bake the larger dish while you shouldn’t take over 35 minutes to bake the smaller one.
  • Give just 10 minutes to allow the stuff cool down and then start serving.

Spicy Shrimps

You will need:

• 600gms of medium or large shrimp

• Chopped onion, 1 cup

• Minced garlic, 3 cloves

• 1 ½ teaspoons of paprika

• ½ teaspoon of black pepper

• ½ teaspoon of white pepper

• 125 grams of salted butter

• ½ teaspoon of powdered oregano

• 1 tablespoon of hot sauce

• ½ cup of chicken broth

How will you prepare?

• Add the butter in a non-stick frying pan

• Add sauté and garlic for a minute after butter has melted

• Now add sauté and onions for two minutes

• Then add black pepper, white pepper, hot sauce, oregano and paprika and stir them together

• Coat the shrimps while sautéing for not more than two minutes

• Now, mix in half a cup of chicken broth and cook till the shrimps are done

Curried Lobster

Now, you will need following ingredients for making curried lobster

• 650 to 700gms of cooked lobster meat

• 100 grams of cashews, grounded into a paste

• 150 grams of butter

• 2 cups of onion paste

• ¾ teaspoon of powdered ginger

• 4 cloves of garlic paste

• 1 teaspoon of powdered turmeric

• ½ cup of mashed tomato

• 1 tablespoon of sugar

• 2 ½ cups of coconut milk

Method to prepare

• Melt the butter again in a non-stick saucepan

• Mix in garlic paste and onion and sauté them for approximately 10 to 12 minutes

• Now, add cashew paste, mashed tomato, turmeric and ginger powder

• Cove the sauté pan and allow it to simmer on low heat for approximately 5 minutes

• After that, uncover the pan after turning off heat and cook for 10 minutes more

• Add salt and sugar to taste and cook for 5 minutes more after stirring the mixture

• Serve with rice

Lobsters can be cooked at home and if you want to mesmerize your guests with a delicious lobster dish you can make Shio-koji seared lobster with seasonal vegetables.   • 1 whole blanched lobster, body split, claws removed
  • ½ pt blanched and stir fried vegetables
  • De-shelled, blanched, claw and knuckle meat of one lobster

For the Shio-Koji marinade

  • ¼ cup Shio-Koji
  • ¼ cup white miso
  • 1 tablespoon of Mirin
  • 1tablespoon of grated ginger
  • 1 tablespoon of maple syrup
  • 1 teaspoon of sesame oil

To make the dish, first make the Shio-koji Marinade. To make the marinade, mix all the ingredients in a food processor or blender. Then boil heavily salted water in a large pot over a high flame. The water should be as salty as sea water. Then, add the lobster to the water and blanch it for around three minutes. After you take out the lobster, immediately shock it in ice water till it cools completely.

After the lobster is cool, remove the shell and claws and put aside the meat. Cover the fleshy portion of the lobster with the Shio-koji marinade properly and put into the refrigerator for at least one whole hour.

Take another pot of salted water and bring to a boil. In this water blanch the seasonal vegetables. Then, take a large non-stick sauté pan, and heat one tablespoon of oil. Then, place the marinated lobster with the flesh side down in the pan and cook till the meat is warm through and through. Remember, because of the shio-koji, the lobster might attain a dark crust, so don’t think that you have burnt it.

Once the lobsters have warmed beautifully, take them out of the pan. Keep the drippings in the pan. After this add the seasonal veggies into boiling water and cool them till they brighten up but don’t overdo this.

In the pan you cooked the coated lobsters, cook the claw and knuckle meat over medium flame. Toss the meat with the dripping and cook till the meat is nice are warm. To this, add the veggies and toss nicely. Pour this over the nicely seared lobster bodies and serve on the double.
