  • “Dilly Fraiche” Sauce
  • Scallops, Fried 10-12 ea
  • Dilly Fraiche Sauce 1 cup
  • Lemon, wedges 1 ea
  • Hot dog rolls, toasted 2 ea
  • Iceberg Lettuce, leaves separated 4 pieces
  • Scallops, cleaned 10-12 ea
  • Creme fraiche ¾ cup
  • Dill, minced or rough chopped
  • Lemon Juice ½ Tbsp
  • Cucumber, small dice 2 Tbsp
  • Salt & Sugar
  • Flour 1 cup
  • Egg, beaten 3 ea
  • Water 1/3 cup
  • Bread crumbs, ultra fine 1 cup
  • Paprika 1 tsp
  • Garlic Powder 2 tsp
  • Vegtable Oil 1-2 qts based on pot size

Preparing the Dilly Fraiche Sauce:-

1. Chop the cucumber and mix it with a hefty pinch of salt and sugar in a small bowl and let sit for 15 minutes.

2. Next, creme fraiche, dill, lemon juice until fully combined. Put the cucumber into the mix.

Frying of Scallops:-

1. In a medium sauce pot you need to heat oil over high heat. Next, Set up three bowls or trays. In the first one add flour, paprika, and garlic powder and mix. Add the eggs and water in the second and whisk together. In the third you can add your bread crumbs.

4. Next, toss the scallops in the flour mixture and coat them evenly and then toss them in the egg mixture. Then put them in the bread mixture and put them to frying till they are brown.

The final touch:

2. Now it is time to toast your bun and spread the dilly fraiche sauce over it. Ensure that there are a good amount of cucumber pieces in each roll.

3. You can add a piece or two of lettuce to the inside of the roll.

4. Finally add in your fried scallops, 4-5 per roll and serve hot.
